My Story
I spent 12 years as a sushi chef in Ginza, working my way up from dishwashing to the counter. I learned that the best food in Tokyo isn't in the Michelin-starred restaurants — it's in the 8-seat ramen shops and family-run izakayas that have been serving the same recipe for 50 years. Three years ago I left the suit-and-tie world to show travelers Tokyo's real culinary soul — the places my grandmother took me as a kid.
Why I Guide
I want people to taste the real Tokyo — the one that lives in small conversations over steaming bowls of broth. Food is how I make friends, and I want to make friends with the world.
My Hidden Gem
A tiny 8-seat ramen shop hidden behind a vending machine in a Tama shopping arcade. No sign. No Instagram. The owner, Mr. Sato, has been making the same tonkotsu broth since 1972. He doesn't speak English, but he doesn't need to — his bowl says everything.
